Healthy Greens Pesto

I love this pesto recipe. It’s so versatile that it can be used in so many different dishes. The taste is amazing and you can adjust the ingredients to your own liking. I recently used this pesto on home made pizza crust to make a pesto and chicken pizza. Then tonight I topped a chicken cutlet with this pesto as it was cooking, and then added melted mozzarella. Mmmmmm… Perfecto! :)

Pesto Ingredients

  • 1 Cup Lightly Packed Raw Baby Kale
  • 1 Cup Lightly Packed Raw Baby Spinach
  • 2 Cups Lightly Packed Fresh Basil Leaves
  • 1/2 Cup Walnuts (pine nuts, roasted pistachios can also be used)
  • 1/4 Cup Grated Parmesan
  • 1 Small Lemon Juiced
  • 2–4 Garlic Cloves (depending on the size of the clove)
  • 1/4–1/2 Cup EVOO (I start with a 1/4 cup and add more until I get the consistency I like)
  • Salt & Pepper to taste

Directions

Throw all ingredients into a food processor and blend until smooth. You may need to stop and scrape the sides down once or twice. I have not accurately measured how much this makes, but I’m estimation this recipes makes about 2 heaping cups.
